Christmas morning is coming up soon, so I thought I'd share one of our family favourite brunch items. This is a cheesy, rich and very easy to put together baked egg dish, that can be prepped the night before, and finished off while the coffee brews. Pop it in the oven while you open gifts, and breakfast is ready when you are!
We have tried a few variations, but our favourite is the one using smoked salmon. Chopped ham, cooked diced bacon or cooked crumbled sausage can be substituted for the salmon.
The cheese is basically a preference...white or orange cheddar, smoked cheddar, something spicy like pepper jack, something stronger such as crumbled blue cheese or asiago...make this you own by choosing your favourite cheese.
If I don't have fresh chives (which I don't always at Christmas) I use green onions. Finely minced red or white onions, cooked until softened can also be used if you wish, as can leeks.
As far as preparation the night before, I grate the cheese, chop the smoked salmon and chives, grease the casserole dish, measure the flour, baking powder, salt and pepper into the mixing bowl and basically have everything else on hand.
When it comes to put the dish together, turn the oven on first, then melt the butter, and then it's just a case of whisking it all together. What could be easier?
1 PINT COTTAGE CHEESE
1/2 CUP FLOUR
1 TEASPOON BAKING POWDER
SALT AND PEPPER
1/2 CUP MELTED BUTTER
1 LB GRATED CHEESE
1 CUP CHOPPED SMOKED SALMON
2 TABLESPOONS CHOPPED CHIVES
- HEAT OVEN TO 350F. LIGHTLY GREASE A 9" X 13" BAKING DISH.
- WHISK TOGETHER ALL INGREDIENTS EXCEPT FOR CHEESE, SALMON AND CHIVES.
- FOLD GRATED CHEESE, SALMON AND CHIVES INTO THE BATTER.
- POUR INTO THE PREPARED BAKING DISH.
- BAKE UNTIL SET AND GOLDEN, ABOUT 30 - 45 MINUTES.
Serve the eggs with diced avocado and salsa on the side, and if you are feeling ambitious...breakfast potatoes. As I mentioned, the eggs are quite rich, so a little goes a long way. This recipe serves about 8 people.
